Two esteemed chefs, Peeter Pihel & Achim Braitsch join hands for a unique project.

Both are connected to what you could call their alma mater – Pädaste Manor & its Michelin-recommended Alexander Restaurant. While separated by a decade, they are both part of the legacy of Nordic Islands’ Cuisine.

As Aivar Hansen wrote in his 2020 Flavours of Estonia article,

“The timing for Nordic Islands’ Cuisine couldn’t have been better. Pädaste naturally carved out its place at the very edge of this food movement. A philosophy rooted in the island’s wild simplicity & the rhythm of the seasons. A dialogue between past & present, guided by shared values & a deep respect for the nature.
